    Ridge gourd is also known as Peerkangai/Beerakaya/Peechinga/Turai. Using a peeler, remove the sharp edges of the ridge gourd. Cut it lengthwise in 4, chop it and set aside.

    In a pan, heat oil and splutter mustard seeds. Add cumin seeds, onion and green chilli. Once the onion turns translucent, add the salt and red chilli powder. Add the chopped ridge gourd and mix well. Cook for 3 minutes.

    Add the milk and mix well continuously for at least 30 seconds or at least it is combined well. Cover and cook on a medium flame for 3 minutes, stirring occasionally until the gourd has softened. Add the coriander leaves, stir and cook on high flame until the excess liquid has evaporated.
