Method
Peel the onion and ginger. Wash the green chillies and curry leaves. Finely chop them all.
Mix the Idli Dosa Batter gently in a bowl. Add the onion, green chilli, ginger, curry leaves, cumin and salt. The batter should be thick but pourable.
Heat 60 ml oil in a heavy kadai over medium flame for 2 minutes until it is hot. Spread the oil over the base and sides of the kadai.
Pour all the batter into the hot kadai and spread it into an even layer about 2 cm thick. Make 4 to 5 small holes with the back of a spoon and pour 1 tsp oil into them.
Cover and cook on low flame for 10 to 12 minutes. The base should be golden and the top should look set, with no wet batter in the centre.
Loosen the edges with a spatula and turn the rotti. Cook uncovered on low flame for 8 to 10 minutes until the second side is golden and the centre is cooked through.
Remove the rotti and rest it for 2 minutes. Cut it into pieces and serve hot.
