Cookd masalas for dosakaya (yellow cucumber)
Method
Get ready by washing the dosakaya, tomato, green chillies, curry leaves and coriander leaves. Peel the dosakaya, remove the seeds and cut it into medium cubes, then taste a small piece; if it is bitter, discard it and use another one. Peel and chop the onion, chop the tomato and coriander leaves, slit the green chillies and break the dry red chillies.
Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds, cumin, urad dal, curry leaves and dry red chillies. Fry for 1 minute until the mustard seeds splutter and the dal turns golden, without burning the spices.
Add onion, green chilli and ginger garlic paste. Fry on medium flame for 4 to 5 minutes until the onion turns light golden and the raw smell goes.
Add tomato, turmeric powder, red chilli powder, coriander powder and salt. Cook on medium flame for 5 to 6 minutes until the tomato becomes soft and the oil shows at the sides.
Add the dosakaya cubes and water. Mix, cover and cook on low flame for 10 to 12 minutes until the pieces are soft but still hold their shape.
Open the lid and simmer on low flame for 3 to 4 minutes until the gravy thickens a little and coats the dosakaya.
Add coriander leaves and switch off the flame. Rest the curry for 2 minutes, then serve it hot with rice or chapati.
