Dry gulab jamun: khova and paneer dough fried golden, soaked in cardamom syrup, drained and rolled in ground sugar. Makes 10, 30 minutes plus soaking, video.

Add sugar, water and cardamom. Bring it to a boil and let it thicken a little.

In a bowl, grate khoya and paneer, add a tablespoon of milk. Knead it all together till it binds evenly. Add the 2nd spoon of milk if it does not bind evenly.

Divide and roll them into spheres.

Heat oil in a kadai, deep fry the kohya spheres in it till it turns golden brown. Keep it aside.

Transfer the fried jamun to the sugar syrup and let it soak for 25-30 minutes.

Take the jamun off the sugar syrup and drain it well.

Coarsely grind sugar and spread it on a plate.Roll the soaked jamun evenly on the sugar and serve.
