Method
Rinse the raw rice twice and soak it in the soaking water for 4 hours. Grate the coconut. Drain the rice well before grinding.
Add the soaked rice, grated coconut, yeast, sugar and grinding water to a mixie. Grind for 5 minutes until smooth, with no coarse rice pieces.
Pour the batter into a deep bowl and mix in the salt. Add the adjusting water little by little until the batter is thinner than dosa batter, reserving any water that is not needed. Cover and keep it in a warm place for 8 hours until risen and lightly bubbly.
Stir the fermented batter gently for 1 minute. If it is thick, mix in a little reserved adjusting water until it flows easily when the kadai is turned.
Heat an appam kadai on medium flame for 2 minutes until a drop of water sizzles. Brush a little oil inside the kadai and pour one ladle of batter into the centre.
Lift the kadai and turn it in a circular motion so the batter spreads around the sides and stays slightly thick in the centre. Break one egg into the centre and sprinkle with a little salt and pepper. Cover and cook on low flame for 3 to 4 minutes until the egg white and yolk are set and the appam edge is lightly browned.
Cook on low flame for 3 to 4 minutes until the egg white and yolk are set and the edge is lightly browned. Loosen the appam with a flat spoon and transfer it to a plate. Repeat with the remaining batter, oil and eggs to make 8 appams, about 4 minutes each.
