Method
Get ready: Peel and wash the onion, then finely chop it. Wash and finely chop the green chillies and coriander leaves. Stir the batter gently and keep it thick enough to make uttapam.
Heat a tawa on medium flame for 2 minutes until it is hot. Grease it with a little oil and keep the flame medium.
Pour about one ladle of batter and spread it lightly into a thick round. Crack one egg over it, spread it gently, and add onion, green chilli, coriander leaves and a little salt.
Drizzle a little oil around the edges and cook on medium flame for 3 to 4 minutes until the base is golden and the egg is almost set. Flip carefully and cook for 1 to 2 minutes until the egg is firm and no wet egg remains.
Repeat with the remaining batter and eggs to make 3 more uttapams, adding a little oil before each one. Cook each for 3 to 4 minutes until the base is golden, then flip and cook for 1 to 2 minutes until the egg is firm with no wet egg. This takes about 5 minutes per uttapam.
