Method
Check the sesame seeds and dal for stones. Remove the chilli stems, grate the coconut, and remove any seeds and hard fibres from the tamarind.
Heat a kadai on low flame and add the urad dal and dry red chillies. Roast for 2 to 3 minutes until the dal starts turning golden. Add the sesame seeds and asafoetida, then roast for 2 to 3 minutes until the sesame starts popping and the dal is light golden. Transfer to a plate and cool for 3 minutes.
Add the grated coconut to the same kadai. Roast on low flame for 2 to 3 minutes until it turns lightly golden and the raw smell goes. Cool it with the roasted sesame mixture.
Add the cooled mixture, tamarind and salt to a mixie. Add the 60 ml water little by little and grind for 1 to 2 minutes to a thick, slightly coarse paste, scraping the sides once.
Transfer the thogayal to a bowl and mix in the gingelly oil. Serve with hot rice within a few hours.
