Cookd masalas for toor dal
Method
Wash the toor dal 2 or 3 times. Put it in a pressure cooker with the peanuts, turmeric powder and 500 ml water. Cook for 4 whistles and let the pressure drop on its own.
Open the cooker. Whisk the dal well with a whisk or ladle until it is smooth and creamy.
Add 400 ml water, the tomato, ginger, green chillies, kokum, jaggery, red chilli powder and salt. Bring to a boil, then simmer on low heat for 10 minutes, stirring now and then, until the tomato is soft.
Heat ghee in a small pan. Add mustard seeds. When they splutter, add cumin, fenugreek seeds, cinnamon, cloves, dry red chillies and asafoetida. Add the curry leaves and fry for a few seconds.
Pour the tempering into the dal and boil for 2 minutes.
Add the coriander leaves and mix. The dal should be thin, sweet and a little sour. Serve hot with rice.
