Cookd masalas for curd
Method
In a big bowl, whisk the curd and besan until smooth with no lumps. Add 750 ml water, ginger, green chillies, jaggery and salt. Whisk again.
Heat ghee in a heavy pan on medium heat. Add mustard seeds. When they splutter, add cumin, fenugreek seeds, cloves, cinnamon, dry red chilli and asafoetida. Add the curry leaves and fry for a few seconds.
Pour in the curd mix. Stir all the time on low-medium heat for about 6 minutes until it comes to a boil. Do not stop stirring, or the curd will split.
Simmer on low heat for 12 minutes, stirring now and then, until the raw besan smell is gone and the kadhi is slightly thick.
Add the coriander leaves and mix. Serve hot with khichdi or steamed rice.
