Cookd masalas for rice
Method
Wash the rice, chana dal, toor dal and urad dal together and soak in water for 4 hours. Drain.
Grind the soaked rice and dals with the curd and 60 ml water to a thick, slightly grainy batter, like idli batter.
Taste a small raw piece of the bottle gourd first: do not use it if it is bitter. Add the grated bottle gourd, carrot, coriander leaves, ginger green chilli paste, turmeric powder, Kashmiri red chilli powder, sugar, salt and 2 tsp oil to the batter. Mix well.
Divide the batter into 2 parts. Just before cooking, add half the Eno to one part and mix gently for about 30 seconds until it turns frothy.
Heat half the remaining oil in a 9-inch non-stick pan. Add half the mustard seeds, sesame seeds, curry leaves and asafoetida and fry for 1 minute until the sesame turns golden.
Pour in the frothy batter and spread it evenly. Cover and cook on low-medium heat for 10 minutes until the bottom is golden and the top is set.
Flip the handvo carefully with a wide spatula. Cook without the lid for 6 minutes until the second side is golden and crisp.
The batter makes 2 handvos. Make the second one the same way: tempering, then 10 minutes covered and 6 minutes after flipping. Cut into wedges and serve hot with green chutney and tea.
