Cookd masalas for raw rice
Method
Rinse the rice and dal together until the water runs mostly clear. Slice the onion, slit the green chillies and finely chop the mint and coriander leaves. Soak the rice and dal in water for 20 minutes, then drain well.
Heat the oil in a pressure cooker on medium flame for 1 minute until hot. Add the sliced onion and fry for 5 to 6 minutes until golden.
Add the cumin, cinnamon, cloves, peppercorns, green chillies and mint leaves. Fry for 1 minute until the cumin sizzles. Add the ginger garlic paste and cook for 2 minutes until the raw smell goes.
Add the drained rice and dal, turmeric and salt. Pour in the water and mix once. Cook uncovered on medium flame for 5 minutes until the mixture comes to a steady boil.
Close the cooker and pressure cook on medium flame for 3 whistles, about 8 to 10 minutes. Switch off the flame and let the pressure release naturally for about 10 minutes until the pressure pin drops. Open only after all the pressure has released and check that the rice and dal are soft.
Mix the khichdi gently, add the ghee and the coriander leaves. Serve hot with khatta, curd or pickle.
