Method

  1. 1

Get ready by rinsing the masoor dal 2 to 3 times until the water looks mostly clear. Finely chop the onion and washed coriander leaves, chop the tomatoes, and mince the ginger and garlic.

  2. 2

Add the rinsed dal, water, turmeric and salt to a pressure cooker. Pressure cook on medium heat for 2 whistles, until the dal is fully soft and mashes easily.

  3. 3

Let the pressure release naturally for about 10 minutes before opening the cooker. Lightly mash the cooked dal with a ladle until it looks creamy but still has some texture.

  4. 4

Heat oil in a kadai on medium heat. Add cumin and let it crackle for 30 seconds, then add onion and fry for 5 to 6 minutes until soft and light golden. Add ginger and garlic, and fry for 1 minute until the raw smell goes. Add tomato, red chilli powder, coriander powder and garam masala, then cook for 4 to 5 minutes until the tomato is soft and oil shows at the sides.
