Method

  1. 1

Wash the rice and moong dal together 2 or 3 times. Put them in a pressure cooker with 1.2 litres water, turmeric powder and salt. Cook for 3 whistles, then on low heat for 5 more minutes. Let the pressure drop on its own.

  2. 2

While the khichdi cooks, make the kadhi mix. In a big bowl, whisk the curd and besan for 2 minutes until smooth with no lumps. Add 600 ml water, ginger, green chillies, jaggery and salt. Whisk again.

Pour in the kadhi mix. Stir all the time on low-medium heat for about 6 minutes until it boils, so the curd does not split.

  5. 5

Simmer the kadhi on low heat for 10 minutes until the raw besan smell is gone. Add the coriander leaves.

Open the cooker and mash the khichdi a little with a ladle. Heat 1 tbsp ghee in a small pan, add cumin and a pinch of asafoetida, and fry for 30 seconds until the cumin sizzles. Pour it over the khichdi and mix well.
