Add all the ingredients required for the masala powder to a pan and dry roast until fragrant, around 2 - 3 minutes. Allow the mixture to cool before blending into a powder. The powder shouldn’t be too fine.

To a pan/pot, add oil, followed by the garlic and green chillis. Fry the garlic until lightly golden before adding the onions and curry leaves. Add salt and saute for 8 - 10 minutes, or until the onions turn golden brown.

Add the ginger garlic paste along with red chili powder, turmeric powder, and half of the masala powder. Cook for 2 minutes, or until the raw smell of the chilli powder goes.

Add the chicken and mix to combine well. The chicken should be nicely coated in the onion mixture. Cook on a medium high heat for 8 - 10 minutes, while mixing every now and then. This allows the chicken to get lightly crispy. Add the rest of the masala powder along with curry leaves and mix to combine well. Saute for an additional 30 seconds before turning the flame off. Serve hot with some rice!
