Method
Rinse the black-eyed peas until the water runs clear. Soak them in the soaking water for 8 hours. Drain and rinse them once more.
Get the other ingredients ready. Remove the stalks from the dry red chillies. Wash the curry leaves and coriander leaves, then finely chop the green chillies and coriander leaves and grate the coconut.
Add the peas, cooking water, salt and turmeric powder to a pressure cooker. Pressure cook on medium flame for 3 whistles, about 22 minutes. Switch off the flame and let the pressure release on its own; the peas should be soft but still hold their shape. Drain the peas well.
Heat the oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds and fry for 30 seconds until they crackle. Add the urad dal, dry red chillies, asafoetida, curry leaves and green chillies. Fry for 1 to 2 minutes until the dal turns light golden.
Add the cooked peas and grated coconut to the kadai. Mix gently and cook on medium flame for 3 to 4 minutes until the extra moisture dries and the sundal is hot.
Switch off the flame and mix in the coriander leaves and lemon juice. Serve warm.
