Cookd masalas for eggs
Method
Boil the eggs in water for 10 minutes. Cool them in cold water, peel and make 2 or 3 shallow slits on each egg.
Dry roast the coriander seeds, cumin, black peppercorns, dry red chillies, fenugreek seeds, cinnamon, green cardamom and cloves in a pan on low heat for 2 to 3 minutes. Add the poppy seeds, sesame seeds and dry coconut and roast for 2 to 3 minutes more until the coconut is golden.
Heat 1 tbsp oil in the same pan. Fry the roughly chopped onions, ginger and garlic on medium heat for 6 to 7 minutes until golden. Add the tomato and cook for 3 minutes until soft. Let it cool, then grind with the roasted spices and 100 ml water to a smooth paste.
Heat 2 tbsp oil in a kadai on medium heat. Add the eggs with 1/2 tsp of the red chilli powder and roast for 3 minutes, turning them, until the outside is golden and red. Take the eggs out.
In the same oil, add 1/2 tsp cumin and let it splutter. Add the ground paste, turmeric powder, the rest of the red chilli powder and the Kashmiri red chilli powder. Fry on low heat for 8 to 10 minutes, stirring, until the oil separates.
Pour in the water and add salt. Bring it to a boil, add the eggs and simmer on low heat for 5 minutes. Add coriander leaves. Serve hot with bhakri, chapati or rice.
