Method
Get ready: wash the jackfruit leaves and wipe them dry. Stir the idli dosa batter gently in a bowl. It should be thick but easy to pour.
Overlap four leaves to form a small cup and secure the joins with four wooden toothpicks. Make four leaf moulds in the same way. Fill each mould three-fourths full with batter.
Pour the water into a steamer or pressure cooker and place a stand inside. Heat on high flame for 5 minutes until the water boils steadily. Place the leaf moulds on the stand, cover without the pressure cooker whistle, and steam on medium flame for 18 to 20 minutes until the idlis are firm and a knife inserted in the centre comes out clean.
Switch off the flame and rest the moulds for 5 minutes. Open the leaves and remove the kadubu carefully. They should come away cleanly and be firm in the centre.
