Method
Get ready by washing the bottle gourd, onion, tomato, green chillies, ginger and coriander leaves. Taste a small peeled piece of bottle gourd; if it is bitter, do not use it. Peel it, remove any hard seeds and cut it into small cubes. Finely chop the onion, tomato and coriander leaves, slit the green chillies, and mince the ginger.
Heat oil in a kadai on medium flame for 1 minute until hot. Add cumin and asafoetida, then add onion, green chilli and ginger. Fry for 4 minutes until the onion is soft and light golden.
Add the bottle gourd cubes and salt. Mix well, cover and cook on low flame for 12 minutes, stirring once or twice, until the gourd releases its juices and is nearly tender when pressed with a spoon.
Add tomato, turmeric powder, coriander powder, red chilli powder and garam masala powder. Cover and cook on low flame for 6 minutes until the tomato is soft and collapsed. Open the kadai and cook for 2 minutes until no liquid is pooled and the bottle gourd is fully tender. Mix in coriander leaves and switch off.
