Cookd masalas for fish

Method

  1. 1

Soak the Malabar tamarind in 120 ml water for 10 minutes until softened, then squeeze it and keep the dark tamarind water. While it soaks, clean the fish, cut it into medium pieces, and mix it with 1 tsp salt and 0.5 tsp turmeric powder. Slice the shallots and garlic, cut the ginger into thin strips, and slit the green chillies. Wash the curry leaves and coriander leaves, then chop the coriander leaves.

  2. 2

Heat the coconut oil in a clay pot or kadai on medium flame for 1 minute until hot. Add the mustard seeds and fenugreek seeds, and fry for 1 minute until the mustard crackles and the fenugreek is light brown. Add the curry leaves and fry for 0.5 minute until crisp, without burning the seeds.

  4. 4

Lower the flame and add Cookd Kerala Fish Curry Masala, red chilli powder and turmeric powder. Fry for 0.5 minute until the powders blend with the oil and the raw smell goes. Add the tamarind water, 500 ml water and salt.

  5. 5

Boil the curry on medium flame for 8 to 10 minutes until it turns deep red and the oil starts showing on top. Do not add the fish before the masala water boils.

  6. 6

Place the fish pieces gently into the boiling curry. Cover and cook on low flame for 8 to 10 minutes, shaking the pot once or twice, until the fish is cooked through and flakes easily.

  7. 7

Switch off the flame and rest the curry for 10 minutes. Add the chopped coriander leaves just before serving.
