Method

  1. 1

Get ready by removing the drumstick leaves from the thick stems. Wash the leaves well and drain them. Peel and finely chop the shallots and garlic. Wash and slit the green chilli, wash the curry leaves, and keep the grated coconut ready. Pat the curry leaves dry so they do not splutter in hot oil.

  2. 2

Heat oil in a kadai on medium flame for half a minute until hot. Add mustard seeds and cumin and fry for 1 minute until the mustard splutters. Add curry leaves and fry for half a minute until they stop spluttering.

Add the shallots, garlic and green chilli. Fry on medium flame for 3 to 4 minutes, until the shallots turn soft and lightly golden and the raw smell of garlic goes.
