Method

  1. 1

Wash the narthangai and wipe them fully dry. Cut them into small pieces and remove the seeds. Dry-roast the fenugreek seeds in a kadai on low flame for 1 to 2 minutes until lightly golden. Cool them for 5 minutes, then grind them to a fine powder.

Add the narthangai, 3 tbsp salt, turmeric powder and 100 ml water to the kadai. Cover and cook on medium flame for 8 to 10 minutes until the peel softens and most of the water dries. Cool for 5 minutes, then transfer the narthangai to a clean bowl.

Heat the gingelly oil in the same kadai on low flame for 1 minute until hot. Add the mustard seeds and fry for 1 minute until they splutter. Add the asafoetida and fry for less than 1 minute until it bubbles.

Add the cooked narthangai, fenugreek powder, red chilli powder, remaining salt and 50 ml water. Cook on low flame for 4 to 5 minutes, stirring often. Stop when the raw chilli smell goes, the pickle turns thick and no watery liquid remains.

Cool the pickle for 30 minutes until it reaches room temperature. Transfer it to a clean, dry glass jar and close the lid.

Rest the pickle for 1 day before serving so the salt and spices settle. Keep it refrigerated and always use a clean, dry spoon.
