Method
Get ready. Wash the okra, green chilli and curry leaves, then wipe the okra fully dry. Trim the okra ends and slice the okra thinly. Grate the coconut. Whisk the curd until smooth.
Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and urad dal. Fry for 1 to 2 minutes until the mustard seeds splutter and the dal is light golden. Add the curry leaves and fry for 30 seconds.
Add the sliced okra. Fry on medium flame for 8 to 10 minutes, stirring every few minutes, until the okra is cooked, lightly crisp and no longer sticky. Add the salt in the last 2 minutes.
Switch off the flame and spread the fried okra on a plate. Cool it for 5 minutes so the curd does not turn watery.
Grind the coconut, cumin and green chilli with 30 ml water to a smooth paste. Cook the paste in a small pan on low flame for 1 minute, then cool it. Mix it into the whisked curd with the salt.
Add the cooled okra and tempering to the curd. Mix gently and serve at once with rice.
