Cookd masalas for mutton
Method
Wash the mutton. Add it to a pressure cooker with ginger garlic paste, 1 tsp salt and 1 litre water. Do not add turmeric, so the stock stays white. Pressure cook on medium heat for 5 whistles, about 20 minutes. Let the pressure drop. Keep the mutton and its stock.
Soak the cashews, sesame seeds and poppy seeds in 100 ml warm water for 20 minutes. Grind them with the soaking water in a mixie to a smooth white paste.
Heat oil in a kadai on low heat. Add bay leaf, cinnamon, cloves, green cardamom, black peppercorns and the slit green chillies. Fry for 1 minute until they smell good.
Add the cashew paste and fry on low heat for 2 minutes. Do not let it brown.
Pour in all the mutton stock and add the cooked mutton, black pepper powder and the remaining salt. Bring to a boil and cook on medium heat for 5 minutes.
Turn the heat to low and add the coconut milk. Stir and heat for 2 to 3 minutes. Do not let it boil after the coconut milk goes in. Serve hot with Tambda Rassa, bhakri or rice.
