Method
Wash the fresh red chillies, remove the stems and wipe them dry. Peel the garlic. Soak the tamarind in 30 ml warm water for 10 minutes until soft.
Heat 1 tablespoon oil in a kadai on medium flame for 1 minute until hot. Add the fresh red chillies and garlic. Fry for 3 to 4 minutes until the chilli skins blister and soften, then transfer them to a plate and cool for 5 minutes.
Squeeze the soaked tamarind and remove the fibres. Add the fried chillies, garlic, cumin, tamarind water, salt, turmeric powder and 30 ml grinding water to a mixie. Grind to a slightly coarse chutney.
Heat the gingelly oil in a small kadai on medium flame for 1 minute. Add the mustard seeds and fry for 30 seconds until they splutter. Add the asafoetida and fenugreek seed powder, switch off, and pour this tempering over the chutney.
Mix well, taste and adjust the salt if needed. Serve the pachadi with hot rice and ghee, or with idli and dosa.
