Method
Soak the dried white peas in the soaking water for 8 hours or overnight. Drain and rinse them well. Break the dry red chillies, finely chop the green chilli, grate the coconut, and rinse the curry leaves and coriander leaves. Chop the coriander leaves.
Add the soaked peas, 500 ml water and salt to a pressure cooker. Pressure cook for 4 whistles on medium flame, then let the pressure release on its own. Check that the peas are soft but hold their shape, then drain any water left.
Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and let them splutter for 30 seconds. Add urad dal, dry red chilli, curry leaves, asafoetida and green chilli, then fry for 1 to 2 minutes until the dal turns light golden.
Add the cooked peas and the remaining salt. Mix well and cook on medium flame for 4 to 5 minutes until the peas are hot and dry.
Add the grated coconut and mix on low flame for 1 minute until it is warm; do not brown it. Switch off the flame.
Switch off the flame and mix in lemon juice and coriander leaves. Rest for 2 minutes, then serve warm.
