Method

Heat oil in a pan and add the split urad dal, cumin seeds and curry leaves. Saute until brown. Add the garlic and shallots and saute until golden brown.

Add the bitter gourd, powdered spices, salt, and jaggery. Continue to saute stirring constantly, on a high flame until it turns dry and crispy.
