    Peel ridges of the bitter gourd completely. Slice thinly and add salt. Rest for 10 mins and squeeze out the water. Coat with rice flour.

    Fry thinly curry leaves for a few seconds. Fry thinly peanuts for a few seconds. Fry thinly red chilli for a few seconds.

    Fry in hot oil for 4-5 mins, until lightly golden and crispy.

    Combine the seasonings. Add the fried ingredients to a bowl and add the prepared seasoning, toss to coat well. Store in an airtight container for up to 2 weeks.
