    Combine the ingredients for the mint coriander pesto in a mixer blender, without the cheese. Pulse blend until coarse. Add the cheese and mix well. Set aside.

    Boil water in a pot with salt and 1 tbsp oil. Add the pasta and cook, until tender about 10 minutes.

    Drain, coat in oil and set aside. Retain a cup of the pasta water.

    In a pan, heat oil over medium, add the sliced garlic and brown them, about 2 minutes. Add the sliced onions and mushroom, saute until tender.

    Add the pesto paste as required and pasta water, salt and pepper.

    Add the pasta and tomatoes, and toss well to coat.
