Method

    Put the Poha / flattened rice into a colander and rinse in water. Let it sit for 5 minutes. The Poha should be soft to the touch.

    Heat 1 tbsp oil in a pan. Add the peanuts and cook for 1 minute. Remove them from the oil and set aside.

    Next, add the small dices of potato to the oil, fry them for 2 minutes and remove them from the oil.

    Add an extra ½ tbsp to the same pan, add mustard seeds and cumin seeds and let them crackle. Add the chopped onion, green chilli and saute for 1 minute.

    Add turmeric powder and salt and mix well. Add the soaked Poha and mix well. Cook for 2 minutes.

    Add the previously cooked peanuts and potatoes and mix them. Taste and adjust the level of salt. Add the chopped coriander leaves and some freshly squeezed lemon juice. Turn off the stove.
