Method

    In a pan, heat up gingelly oil and roast the peanuts on a medium flame for 1 minute. Remove them from the oil and set aside.

    Add mustard seeds to the same pan. When the mustard seeds start to splutter, add the split urad dal, chana dal, dry red chilli and green chilli. Saute until the chana dal starts to turn golden brown. Add in the curry leaves, asafoetida, salt, and turmeric powder.

    Add the cooked rice, lemon juice and sugar. Mix well. Taste and adjust the salt. Add the roasted peanuts and coriander leaves. Mix well and turn off the heat.
