    Dry roast the curry leaves and set it aside.

    Dry roast all the lentils until golden brown and set aside.

    Dry roast all the other ingredients until they lose moisture and set aside to cool down. Add all the ingredients to a blender jar then add salt and asafoetida, grind it into a coarse powder.

    In a pan pour oil and add peanuts and cashews, saute until they turn golden brown. Add onion, green chilli and garlic and saute until the onion turns translucent. Add the cooked rice to the pan and add 3 tbsp of the podi along with a tablespoon of ghee. Thoroughly mix the rice and serve hot, optionally garnish with more ghee.
