Cookd masalas for chow chow
Method
Wash the chow chow, curry leaves and coriander leaves. Peel the chow chow, remove the firm centre and cut it into small cubes. Chop the onion and coriander leaves. Deseed and slit the green chilli, and grate the coconut. Pat the curry leaves dry so they do not splutter in hot oil.
Heat the oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds, urad dal, green chilli and curry leaves. Fry for 1 to 2 minutes, until the mustard seeds splutter and the dal turns light golden.
Add the onion and fry on medium flame for 3 to 4 minutes. Stir until the onion turns soft and lightly golden.
Add the chow chow, turmeric powder, salt and water. Mix well, cover and cook on low flame for 8 to 10 minutes, stirring once or twice, until the cubes are tender but not mushy.
Remove the lid and cook on medium flame for 2 to 3 minutes. Stir until any extra water dries up and the poriyal looks dry.
Add the grated coconut and coriander leaves. Mix and cook on low flame for 1 minute, then switch off when the coconut is warmed through.
