Method

  1. 1

Rinse the whole green moong well and soak it in water for 4 hours. Drain it fully after soaking. Chop the onion, green chilli, ginger, curry leaves and coriander leaves while the dal soaks.

  2. 2

Grind the soaked moong in a mixie without water to a thick, slightly coarse batter. Add the grinding water only a teaspoon at a time, and only if the mixie will not turn; do not make it smooth or watery.

  3. 3

Transfer the batter to a bowl. Add onion, green chilli, ginger, curry leaves, coriander leaves, cumin and salt. Mix well until the batter is thick enough to hold its shape.

  4. 4

Heat oil in a kadai on medium flame for 5 minutes. Drop a small piece of batter into the oil; it should rise slowly with steady bubbles, not burn at once.

  5. 5

Wet your fingers, take a small portion of batter and flatten it into a thin vada. Slide it carefully into the hot oil and deep fry for 3 to 4 minutes, turning once or twice, until both sides are golden and crisp.

  6. 6

Drain the vada on a plate lined with paper. Repeat with the rest of the batter to make about 16 vadas, frying a few at a time on medium flame. Fry each vada for 3 to 4 minutes until golden, crisp and firm in the centre.
