Method
Wash the whole green moong well. Peel the ginger and chop the green chilli. Soak the moong in the measured water for 4 hours, until it is soft when pressed. Drain it before grinding.
Grind the soaked moong, ginger, green chilli and salt in a mixie for 4 to 5 minutes. Add the grinding water little by little until the batter is smooth and spreads easily.
Heat a tawa on medium flame for 3 minutes. Sprinkle a few drops of water on it; they should sizzle and dry quickly, but the tawa should not smoke.
Pour one ladle of batter in the centre and spread it into a thin round. Drizzle a little oil around the edges and cook on medium flame for 2 to 3 minutes, until the bottom is golden and the top looks dry. Flip and cook for 1 minute, until no wet batter remains and the second side has light brown spots. Repeat with the remaining batter for 28 to 32 minutes in total, stirring the batter before each pesarattu.
