Method
Chop the curry leaves, onion and green chillies. Mix the idli dosa batter gently in a bowl. Check that it is thick but easy to pour. Add the salt and mix well.
Heat the oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds, urad dal and cumin. Fry for 1 to 2 minutes until the mustard crackles and the dal turns light golden. Add the curry leaves, onion and green chilli, then fry for 4 to 5 minutes until the onion turns soft.
Add Cookd Idly Chilli Powder and fry on low flame for 1 minute until it coats the tempering evenly. Switch off the flame. Cool the tempering for 2 minutes.
Mix the cooled tempering into the batter. Stir gently until the onion and spices are spread evenly.
Heat an appe pan on medium flame for 2 minutes until hot. Add a few drops of oil to each hollow and fill each hollow three-fourths with batter.
Cover and cook on medium-low flame for 3 to 4 minutes until the bottoms are golden and the edges look set. Turn each paniyaram, add a little oil if needed, and cook for another 3 to 4 minutes until golden on all sides and cooked through at the centre. Repeat with the remaining batter; cooking all the batter will take about 40 to 45 minutes. Serve hot with coconut chutney or tomato chutney.
