Method
Soak the tamarind in 30 ml warm water for 5 minutes. Meanwhile, peel the garlic, remove the stems from the dry red chillies and grate the coconut. Squeeze the soaked tamarind to take out the pulp.
Heat 2 teaspoons gingelly oil in a kadai on low flame. Add the urad dal and dry red chillies. Fry for 2 to 3 minutes until the dal is light golden and the chillies are crisp.
Add the garlic and fry on low flame for 3 to 4 minutes until it softens and the raw smell goes. Add the grated coconut and tamarind pulp with its soaking water. Fry for 1 minute until the coconut is warm, then switch off the flame and cool for 5 minutes.
Add the roasted mixture and salt to a mixie. Add the remaining water little by little and grind for about 2 minutes until thick and slightly coarse. Scrape the sides once and grind again if needed.
Transfer the thogayal to a bowl and mix in 1 teaspoon gingelly oil. Serve with hot rice.
