Method
Get ready by peeling and halving the shallots. Peel and crush the garlic.
Soak the tamarind in 150 ml water for 20 minutes until soft. Squeeze it well, strain the thick tamarind extract and keep it ready.
Heat gingelly oil in a kadai on medium flame for 1 minute. Add mustard seeds, urad dal, fenugreek seeds and dry red chillies. Fry for 1 minute until the mustard crackles and the dal turns light golden. Add asafoetida and the curry leaves, and fry for 30 seconds until the leaves crisp.
Add the shallots and garlic. Sauté on medium flame for 6 to 7 minutes until the shallots soften and lightly brown.
Add turmeric powder, red chilli powder and coriander powder. Fry on low flame for 1 to 2 minutes until the raw smell of the powders goes.
Pour in the tamarind extract, 330 ml water and salt. Bring it to a full boil on high flame for 4 to 5 minutes, then simmer on medium-low flame for 8 to 10 minutes until the gravy reduces slightly and oil floats on top.
Add jaggery and cook on low flame for 2 to 3 minutes until it dissolves. Switch off, cover and rest for 10 minutes before serving.
