Method
Get ready by measuring the rice rava and water. Grate the coconut and keep the curry leaves ready. Grease the idli plates with 1 tsp oil.
Heat 1 tbsp oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds and fry for 30 seconds until they splutter. Add the urad dal and fenugreek seeds and fry for 1 minute until light golden. Add the broken dry red chillies, curry leaves and coconut and fry for 1 minute until the curry leaves are crisp.
Add the rice rava and mix well. Roast on low flame for 4 to 5 minutes, stirring, until the rava smells toasted and feels dry.
Pour in 1 litre water and add the salt. Mix well so there are no lumps. Cook on low flame for 8 to 10 minutes, stirring now and then, until the water is absorbed and the mixture forms a thick, moist dough that leaves the sides of the kadai. Switch off.
Cool the dough for 5 minutes until it is warm enough to handle. Knead it with a wet hand until it holds together. Make small balls, press each one lightly with your thumb and arrange them in the greased idli plates.
Pour 1 litre water into an idli steamer and boil on high flame for 5 minutes until steady steam rises. Place the idli plates inside and steam on medium flame for 12 to 15 minutes until the dumplings are firm and a toothpick comes out clean. Rest them for 2 minutes before serving.
