Method
In a wide bowl, mix the ragi flour, grated paneer, onion, green chillies, curry leaves, coriander leaves and salt.
Bring 450 ml water to a rolling boil, about 3 minutes. Pour it into the flour little by little, mixing with a spoon. When it is cool enough to touch, knead with greased hands for 2 minutes into a soft, slightly sticky dough. Add a spoon of hot water if it cracks.
Divide the dough into 10 lemon-sized balls. Grease a plastic sheet or banana leaf with a few drops of oil and pat each ball with oiled fingers into a thin round, about 3 to 4 mm thick.
Heat a tawa on medium flame. Turn the adai onto the tawa and peel off the sheet. Drizzle 1 tsp oil around it and cook for 2 to 3 minutes until the bottom is firm with brown spots. Flip and cook for 2 minutes more.
Make the rest the same way. Serve hot with coconut chutney.
