Cookd masalas for cooked rice
Method
In a bowl, mix the cooked rice, besan, wheat flour, ginger green chilli paste, ajwain, 1/2 tsp turmeric powder, 1/2 tsp red chilli powder, 1 tsp sugar, salt and 1 tbsp oil. Mash with your hand into a soft, sticky dough. Add a spoon or two of water only if it is dry.
Oil your palms and shape the dough into small finger-length rolls (muthiya).
In another bowl, whisk the curd, 1 tsp besan, the remaining turmeric powder, sugar and salt, and the garam masala with 600 ml water until smooth.
Heat 2 tbsp oil in a wide pan. Add mustard seeds. When they splutter, add cumin, dry red chillies, asafoetida, curry leaves and the remaining red chilli powder. Fry for 1 minute.
Pour in the curd mix. Stir all the time on low-medium heat for about 6 minutes until it comes to a boil.
Gently drop in the muthiya one by one. Cook on low heat for 10 minutes without stirring hard, until the muthiya are firm and the gravy is thick like kadhi.
Crush the kasuri methi and add it with the coriander leaves. Serve hot.
