Cookd masalas for rohu fish
Method
Wash the rohu pieces and pat them dry. Rub them with 1 tsp salt and 1/2 tsp turmeric powder. Keep aside for 10 minutes.
Heat the mustard oil in a kadai until it smokes, then lower the heat for 1 minute. Fry the fish in batches for 2 to 3 minutes on each side until golden. Take out and keep aside.
In the same oil, add the ghee, bay leaves, dry red chillies, cardamom, cloves, cinnamon and cumin seeds. Fry for 30 seconds until they crackle.
Add the onion paste and ginger paste. Fry on medium heat for 8 to 10 minutes, stirring often, until golden brown and the oil comes out at the sides.
Mix the remaining turmeric powder, cumin powder and Kashmiri red chilli powder with 3 tbsp water. Add to the pan and fry for 3 minutes until the raw smell goes.
Add the tomato, remaining salt and sugar. Cover and cook for 4 minutes until the tomato is soft.
Lower the heat. Add the whisked curd and stir fast for 2 minutes until the oil comes up again.
Pour in 300 ml hot water and bring to a boil. Slide in the fried fish and slit green chillies. Simmer for 6 minutes, spooning the gravy over the fish.
Sprinkle garam masala, cover and rest for 10 minutes. Serve with steamed rice.
