Method
Get ready by rinsing the idly rice and urad dal separately until the water is mostly clear. Keep the idli plates or small katoris, mixie and a large bowl ready.
Soak the rice and urad dal separately in the soaking water for 4 to 5 hours. The rice and dal should soften when pressed between your fingers.
Drain the soaked dal and grind it to a fine, fluffy paste. Then drain and grind the rice with the grinding water, adding it little by little, to a smooth, thick batter. Mix both in a large bowl.
Mix the yeast and 1 tsp sugar into 50 ml warm water and leave it for 10 minutes until frothy. Stir it into the batter with the remaining sugar and the salt. Cover and keep it in a warm place for about 2 hours until it doubles and looks bubbly.
Grease the idli plates with oil and pour water into the pressure cooker or steamer. Heat the water on high flame for 5 minutes until it starts steaming.
Stir the fermented batter gently and fill each idli mould three-fourths full. Place the plates in the steamer, cover and steam on medium flame for 12 to 15 minutes until the sannas are firm and a toothpick comes out clean.
Switch off the flame and rest the plates for 5 minutes. Remove the sannas with a wet spoon and serve them warm.
