Sathak chutney is a Tamil Nadu chutney of onion, tomato and garlic blended with dark-fried red chillies. Medium-spicy, serves 3, 30 minutes, with video.

In a kadhai, pour oil and add the dry red chillis, saute on a moderate flame until the chillies turn dark brown and crispy (around 20 seconds) and set them aside

In the same kadhai, add the mustard seeds and urad dal, and saute until they turn aromatic (around 10 seconds). Add the onion, garlic and tomato and saute until the onion turns light golden brown (around 5 mins)

Add salt and mix thoroughly and let it cool down. Once cooled, blend into a fine paste and serve.
