Method
Get ready. Wash the curry leaves and finely chop the green chillies and onion. Grate the coconut.
Heat the oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds and fry for half a minute until they splutter. Add the urad dal, cumin, curry leaves and green chilli, and fry for 1 minute until the dal is light golden. Add the onion and fry for 3 to 4 minutes until soft, then add the coconut and fry for 1 minute until its raw smell reduces.
Pour in the water and add the salt. Boil on medium flame for 4 to 5 minutes until the water bubbles well.
Lower the flame and add the rice flour slowly while stirring. Stir and cook for 3 to 4 minutes until the flour absorbs the water and forms a thick dough. Cover and cook on low flame for 2 minutes until no dry flour remains and the dough leaves the sides of the kadai.
Cool the dough for 5 minutes until it is warm enough to handle. Grease your hands with some of the oil and knead for 3 to 4 minutes until smooth. Divide it into 12 equal portions and shape each portion into an oval dumpling.
Pour the steaming water into a steamer and boil on high flame for 5 minutes until steady steam rises. Grease the idli plates with the remaining oil and place the dumplings on them without crowding.
Steam the kadubu on medium flame for 12 to 15 minutes until the surface is firm and a toothpick comes out clean. Rest them for 3 minutes before serving.
