Method
Measure all the ingredients and remove the chilli stems. Keep a plate ready for the roasted ingredients.
Heat a dry kadai on low flame for 1 minute until warm. Add the sesame seeds and roast for 3 to 4 minutes, stirring often, until they crackle lightly and turn pale golden. Transfer them to the plate.
Add the urad dal and chana dal to the same kadai. Roast on low flame for 2 to 3 minutes until both dals turn golden. Transfer them to the plate.
Add the dry red chillies and asafoetida to the kadai. Roast on low flame for 1 to 2 minutes until the chillies turn crisp without blackening. Transfer them to the plate.
Spread the roasted ingredients on the plate. Cool them for 10 minutes until they are at room temperature.
Add the cooled roasted ingredients and salt to a mixie. Pulse for 1 minute until you get a slightly coarse powder, without grinding it into a paste.
Mix the podi with hot rice and gingelly oil while serving. Store the remaining powder in a dry, airtight container after it has cooled completely.
