Cookd masalas for chana dal
Method
Wash the chana dal and soak in water for 5 hours. Drain.
Grind the soaked dal with the ginger, garlic and green chillies to a coarse paste. Add the 30 ml water only if the grinder needs it.
Mix the turmeric powder, a pinch of asafoetida, salt, 2 tsp sugar and 1 tbsp oil into the paste. Grease a steel plate or tin with a few drops of the oil. Add the Eno to the batter, mix gently until frothy and pour it into the plate.
Steam on high heat for 20 minutes, until a knife put in the centre comes out clean.
Cool for 10 minutes. Crumble the steamed cake with your hands into coarse crumbs in a big bowl.
Heat 2 tbsp oil in a small pan. Add mustard seeds. When they splutter, add sesame seeds, the chopped green chilli and a pinch of asafoetida. Add 60 ml water, the remaining sugar and the lemon juice and boil for 1 minute. Pour over the crumbs and mix gently.
Top with the grated coconut, coriander leaves and pomegranate. Add the sev just before serving.
