Method

  1. 1

Wash the bottle gourd and green chilli. Peel the bottle gourd and remove the soft centre. Cut it into small cubes, slit the green chilli and break the dry red chilli. Taste a small piece of the raw gourd first; if it is bitter, do not use it.

  2. 2

Peel and finely chop the shallots. Wash and drain the curry leaves and coriander leaves, then finely chop the coriander. Grate the coconut and keep the spices and salt ready. Pat the curry leaves dry so they do not splutter in hot oil.

  3. 3

Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and fry for 30 seconds until they splutter. Add urad dal, dry red chilli, curry leaves and green chilli, and fry for 30 seconds until the dal turns light golden.
