Cookd masalas for soya chunks
Method
Pour the boiling water over the soya chunks and soak for 10 minutes. Drain, rinse in cold water and squeeze out all the water. Pulse them in a mixie to a coarse mince.
Mix the wheat flour, salt and 1 tsp oil. Add the water little by little and knead to a soft dough. Cover and rest for 20 minutes.
Heat 1 tbsp oil in a pan on medium heat. Add the cumin and let it splutter. Fry the onion for 4 minutes until light brown. Add the ginger garlic paste and green chillies and fry for 1 minute.
Add the soya mince, turmeric powder, red chilli powder, coriander powder, garam masala, salt and the water. Cover and cook on low heat for 4 minutes until dry. Add the coriander leaves and let the filling cool fully.
Divide the dough and the filling into 8 parts each. Roll a dough ball into a 4-inch round, put the filling in the centre, seal the edges and roll it gently into a 7-inch paratha.
Heat a tawa on medium heat. Cook the paratha for 1 minute on each side. Spread ghee on both sides and cook for 1 to 2 minutes more on each side until golden brown spots appear. Make the rest the same way. Serve hot with curd and pickle.
