    Add the jaggery and water to a pot and bring to a boil. Once all the jaggery is dissolved, add the whole spices, spring onion whites, ginger and garlic. Simmer for 10 minutes, or until fragrant.

    Add the soy sauce and simmer for 5 minutes. The mixture should have slightly thickened. While the mixture is simmering, add the cornstarch slurry and start mixing. The mixture should start to significantly thicken. Turn the flame off after 2 minutes and strain the mixture, to remove the solids.

    In a separate pot, bring water to a boil. Add the noodles and cook according to the package directions. Once cooked, strain the noodles.

    To plate, add 1 full ladle of the sauce into a bowl, followed by the strained noodles. Top with the spring onion greens, sesame seeds, green chilli, garlic, chilli oil and roasted cumin powder. Mix well to combine before eating!
