Method
Wash the mutton. Add it to a pressure cooker with ginger garlic paste, turmeric powder, 1 tsp salt and 750 ml water. Pressure cook on medium heat for 5 whistles, about 20 minutes. Let the pressure drop. Keep the mutton and its stock.
Dry roast the dry red chillies, coriander seeds, cumin, fennel seeds, black peppercorns, cloves, cinnamon and star anise in a pan on low heat for 2 to 3 minutes until they smell good. Add the sesame seeds, poppy seeds and dry coconut and roast for 2 minutes more until the coconut turns golden. Let it cool.
Heat 1 tbsp oil in the same pan. Fry the sliced onion and garlic on medium heat for 6 to 8 minutes until deep brown.
Grind the roasted spices, the fried onion and garlic and 100 ml water in a mixie to a fine red paste.
Heat 3 tbsp oil in a kadai on medium heat. Fry the chopped onion for 4 to 5 minutes until golden. Add red chilli powder and the ground paste. Fry on low heat for 6 to 8 minutes, stirring, until the oil separates.
Add the cooked mutton and fry for 3 minutes. Pour in all the mutton stock and 250 ml water. Add the remaining salt. Simmer on low heat for 10 minutes until the gravy is thin, red and oily on top. Add coriander leaves. Serve hot with bhakri or rice.
